Ceremonial Matcha! What's the difference?

So many questions asked on our Matcha, and the differences there are. We all hear and understand the term "Ceremonial" is considered the best, but no one seems to know why. Not a worry, your tea gurus are here to answer it for you. Swift and to the point, here is what I took into consideration when we sourced our matcha:
  1. The color of the tea
  2. The texture, quality, and density
  3. The quality of the product – is it stem or is it leaves? (which makes a huge difference)
  4. The fineness of the powder
  5. Whether there has been any prolonged exposure to oxygen
  6. How it was ground up
  7. Treatment prior to processing
Now to explain a little in-depth:

Basically, there are 2 types of matcha, Ceremonial and culinary. Ceremonial grade matcha is made from the youngest tea leaves, with the stems and veins entirely removed. The leaves are stone-ground, which makes the matcha suitable for a thick-style tea, a much notable flavor and makes it easier for your body to actually absorb the benefits of matcha and not just absorb fillers.

This is not to put Culinary matcha down, if trying to save a few dollars then you can consider premium matcha, which is nearly half the price of our ceremonial grade matcha, the difference is the taste (ceremonial is much sweeter on its own) and that it has been processed with a stems and leaves compared to the ceremonial grade. So in the end, culinary matcha is a more affordable way to consume matcha on the daily but be aware of what else is being added to it if it is not just ceremonial.

Ceremonial matcha tea spends the last few weeks of its growth cycle in the cool shade of bamboo mats, sometimes several layers of them, in order to keep the sunlight out. Then, only the top one or two leaves of each plant are handpicked and allowed to dry, usually indoors, again away from any direct sunlight. That’s why this grade of matcha is so green and so full of nutrients.

After that, the stems and veins are removed and discarded, by hand. These components of the plant have zero nutritional value, so removing them does not affect the final product. Using a granite millstone, they then grind the dried matcha leaves into a super-fine powder that is about the same consistency as cosmetic eye shadow. Immediately, the powder is sealed in airtight containers to prevent oxidation, which can destroy the taste profile and turn the substance brown.
